Sourdough Pancakes
These are the best pancakes you will ever have and cook through so easily! They are fluffy and delicious with that subtle sourdough taste. My family is always begging me for them.
One of my pet peeves is when you go to get a recipe from someone and it's like digging for gold because you cant find the recipe through all the jibber jabber.
So let's get straight to it!
I usually double this for our family of 6! You need to start this recipe at night, and then let it sit on the counter overnight. You will finish adding the rest of the ingredients in the morning before cooking.
Ingredients:
- 1 1/2 cup flour
- 1 cup buttermilk
- 1/2 cup discard
- 2 Tablespoons butter
- 2 eggs
- 2 Tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon french grey salt
- 1 teaspoon vanilla
- Extra butter for cooking
Recipe:
Mix flour, buttermilk, and discard in a large mixing bowl. Cover and let rest at room temp overnight.
Melt butter and let cool.
In a separate mixing bowl whisk together eggs, sugar, salt, vanilla, and butter.
Then add the wet mixture to the flour mixture.
Let the batter rest for 10 minutes before cooking.
Cook with 1/3 cup potions of batter on a heavily buttered griddle or skillet.
Before serving I love to lightly salt them with my favorite french grey salt along with butter and syrup of course!

Oops! Yes it’s 1/2 cup discard sorry about that typo!
And yes add baking poweder into that wet mixture before you combine!

When you say “1/2 discard” is there a unit of measure for that? Like 1/2 a cup or 1/2 a tablespoon etc? Or am I just so new to sourdough I don’t understand lol

Do you add the baking powder at the same time as the salt, sugar, egg, butter, vanilla mixture?

Hi! How much discard? It just says 1/2 🤔 is it just half of the discard or 1/2 cup or something? Thanks!
